Our all natural pastas are made by local artisans in the Puglia region of Italy. The artisans select the finest Durum Wheat/Whole Wheat Semolina to achieve a special blend, which ensures a pasta with the utmost enjoyable texture and flavor. Cucina Antica Pastas are made utilizing traditional methods along with this specially selected Durum Wheat/Whole Wheat Semolina and spring water. It is then extruded through bronze dies, followed by a low temperature-drying period, of 24 to 36 hours (depending upon the shape). This artisanal method is what gives Cucina Antica Pastas its unique old world flavor, texture and integrity.
