Summer Christmas: Make Cranberry Sauce Your Summer Sauce June 25 2015, 0 Comments

June 25th is also known as Summer Christmas. Some people might use it as an excuse to buy each other presents half way through the year, or maybe to finally take down last year’s Christmas decorations (though at this point, you may just want to leave them up for another six months). We prefer to use it as an excuse to eat cranberry sauce…not that we ever really needed an excuse.

But summer time is hardly the time for turkey and stuffing. So instead, we’ve come up with three recipes that turn cranberry sauce into your favorite summer topping.

For Starters: Cranberry-Jalapeno Salsa

This one is a light and fresh dip that goes perfectly with your favorite summer cocktail

What you’ll need:

  • 1 jar (16 oz.) Cucina Antica Cranberry Sauce
  • 3 to 4 chopped green onions
  • 1 to 2 seeded and chopped jalapeno peppers (depending on how spicy you want it)
  • ½ tsp salt
  • 1 tbsp. fresh lemon juice
  • ¼ cup fresh cilantro (chopped)
  • One lime, sliced into wedges
  • Your favorite tortilla chips

How to make it:

In a food processor or small blender, combine Cucina Antica Cranberry Sauce, green onions, jalapenos, salt, and lemon juice. Pulse 2-4 times or until well blended, scraping sides as needed. Pour sauce into a large bowl and mix in cilantro. Cover and chill for 1 to 24 hours. Garnish with sliced lime and serve with chips.

For The Main Course: Cranberry Sauce Hot Wings

This one takes sweet and savory flavor to a whole new level

What you’ll need:

  • 1 jar (16 oz.) Cucina Antica Cranberry Sauce
  • 2 tbsp. ground mustard
  • 2 tbsp. hot pepper or tabasco sauce
  • 2 tbsp. low sodium soy sauce
  • 1 tbsp. cider vinegar
  • 2 tsp. garlic powder
  • 3 lbs. chicken wings

How to make it:

Preheat oven to 375. In a large slow cooker or crock pot, combine Cucina Antica Cranberry Sauce, ground mustard, soy sauce, vinegar, and garlic. Cover and cook on low for 30 minutes. Cut chicken wings into three pieces and discard wing tip sections. Place chicken wings on greased pan and cook for 30 to 45 minutes or until golden brown, turning once. Place cooked wings in slow cooker and toss in the sauce. Remove from sauce and place wings back in the oven for 5 minutes, or until sauce is bubbly. Serve with ranch or blue cheese dressing for dipping.

For Dessert: Ice Cream and Cranberry Sauce

This one is easy, fast, and kid friendly

How to make it:

Scoop ice cream into a large bowl and top with Cucina Antica Cranberry sauce. Top with extra whipped cream. It’s that easy!
