Serves 4 to 6



In a sauce pan bring water to a boil, add 2 tbsp kosher salt to boiling water, then add Cucina Antica Whole Wheat or Semolina Penne. Cook for about 10 minutes, drain and allow to cool to room temperature. In a large platter combine, pasta, arugula, cherry tomatoes, goat cheese, and black olives. Drizzle some Cucina Antica Extra Virgin Olive Oil over the top, add salt to taste, and toss. Top with some Parmesan cheese, fresh basil, touch of fresh ground pepper, and pine nuts.
