Serves 4 to 6
- Cucina Antica Organic Red Wine Vinaigrette Dressing
- 1 lb fresh green beans, rinsed & trimmed
- 6 red or white baby potatoes
- 1/2 cup red onions, sliced
Place green beans in a large saucepan filled with water (enough to cover green beans), bring to a boil over high heat, reduce heat to medium low, and simmer about 10 minutes, drain and let cool. In another saucepan filled with water add the baby potatoes, and bring to a boil over high heat, reduce heat to medium low, and simmer until done (test by poking potatoes with fork or knife and if utensil penetrates potatoes easily, they are done, drain and let cool, cut potatoes into 1 inch chunks or slices. On a platter, combine green beans, potatoes and red onions, add Cucina Antica Organic Red Wine Vinaigrette Dressing to ingredients and toss.
