Preheat oven to 350 degrees. Use a meat hammer or mallet to pound and flatten the chicken breasts to approximately 1/4" thickness. Heat olive oil in a large pan on medium-high heat. Dip chicken breasts one at a time into the egg mixture, then into the breadcrumbs, coating both sides of the cutlet. Place breaded cutlets into the pan. On medium heat, gently fry the chicken cutlets until they are golden brown on each side, approximately 3 to 4 minutes per side. While the chicken is frying, coat the bottom of a casserole pan with Cucina Antica Garlic Marinara sauce and once browned on both sides, arrange them on top of the sauce in the casserole dish. Top the chicken cutlets with more marinara and place slices of mozzarella over the chicken and sprinkle with parmesan cheese. Bake in the oven for 10 to 12 minutes, or until the mozzarella melts and begins to bubble.  Serve with your favorite pasta.
