Honey Pecan Salad with Balsamico Dressing September 22 2015, 0 Comments

 Serves 1


  • 1 bottle Cucina Antica Organic Balsamico Dressing
  • 3 cups fresh spinach
  • 1 cup pecans, halved
  • 1/2 cup honey ham, sliced or cubed
  • 1 granny smith apple, cubed
  • 1/4 cup red onion, sliced or chopped 
  • 1/4 cup blackberries  
  • 1/4 cup feta cheese
  • 1-2 tbsp. fresh honey
  • 1-2 tsp. salt


Preheat oven to 350 degrees. Place pecans in a medium sized bowl and toss with honey, adding extra as needed to fully coat nuts. Spread glazed nuts in a single layer on a baking sheet and sprinkle lightly with salt. Place in oven on the middle rack and toast for 8 to 10 minutes, stirring halfway through to cook evenly. Remove from oven and allow to cool.

Rinse and drain spinach leaves, remove stems, and place in a large bowl, tearing or chopping as desired. Add apples, blackberries, and ham. Toss in glazed pecans. Add Cucina Antica Organic Balsamic Dressing and toss salad until well combined. Add feta and toss again. Plate and serve with a glass of sweet white wine.
