Serves 4 to 6

  • 1 jar Cucina Antica la Pizza sauce
  • 1 tbsp. Cucina Antica Extra Virgin Olive Oil
  • 1 pre-prepared pizza crust OR homemade pizza crust (find instructions here)
  • 8 oz. Portobello or crimini mushrooms, sliced
  • ½ yellow onion, sliced
  • 2 bell peppers, sliced (red, yellow, green or combination)
  • 2 cloves garlic, minced
  • 1/3 cup sliced sun dried tomatoes
  • 4 oz. mozzarella cheese
  • ½ cup grated Pecorino Romano Cheese

Preheat oven to 350 degrees. Prepare crust as desired and spread onto a 14" round, greased cooking sheet. In a small saute pan, heat Cucina Antica Extra Virgin Olive Oil over medium heat. Add mushrooms and onions and cook until tender and beginning to caramelize. Add garlic, stir and remove from heat. Pour Cucina Antica la Pizza sauce onto prepared pizza crust. Top with sun dried tomatoes and warm mushroom mixture. Add bell peppers. Top with mozzarella and Pecorino Romano cheeses. Add extra mushrooms on top as desired. Bake for about 13 minutes, until crust is crispy and cheese is melted and bubbly. Allow to cool a few minutes before slicing.
