Spicy Shakshuka Pasta
1 package (about 10 oz) spiralized sweet potato noodles
4 large eggs
1 – 25 oz jar Cucina Antica Spicy Arrabbiata pasta sauce
Salt and pepper, to taste
Red chili pepper flakes, to taste
In a large skillet, add Spicy Arrabbiata sauce and cook over medium-high heat for 3 minutes.
Using a spoon, make 4 wells in the sauce for the eggs. Carefully crack the eggs into the wells. Sprinkle with salt and pepper.
Cover the skillet and reduce heat to low. Cook for 10 minutes, or until the eggs white are cooked through.
While the eggs cook, heat the spiralized sweet potato noodles according to package instructions. Divide and transfer noodles to a serving plate.
Top with a cooked egg and sauce. Sprinkle with red chili pepper flakes and serve.
