Instant Pot Irish Italian Stew
2 tbsp butter
1 ½ lb beef stew meat
3 tbsp almond flour, for coating meat
Salt and pepper, to taste
1 bottle Guinness Stout beer
1 large onion, diced
2 garlic cloves, minced
2 large carrots, diced
2 large parsnips, diced
1 cup Cucina Antica Garlic Marinara sauce
3 cups beef broth
1 ½ russet potatoes, peeled and diced into 1-inch pieces
Turn on Instant Pot sauté setting and add butter.
Coat beef stew meat in almond flour, salt, and pepper. Add to Instant Pot and brown all sides. Once meat is browned, pour a little Guinness beer to deglaze the pot.
Add onions, garlic, carrots, and parsnips, and sauté for 2 minutes, or until fragrant. Stir in remaining Guinness beer, Garlic Marinara sauce, beef broth, and potatoes.
Cook on High Pressure for 35 minutes. Once done, quick release the pressure and remove the lid. Stir stew and serve.
