Growing up, one of my favorite things was having sausage, pepper and onion sandwiches. Now, I've reinvented this childhood favorite into a Whole30 approved meal the whole family can enjoy!

Ingredients

1 tbsp olive oil

1 lb of ground Whole30 complaint ground Italian sausage (such as Butcher Box)

1 medium yellow onion, sliced

3 bell peppers (1 yellow, 1 red and 1 green), sliced into strips

1 bag cauliflower rice (fresh or frozen)

1/2 jar of Cucina Antica Garlic Marinara

1 tbsp Italian seasoning
Directions
Heat a pot with olive oil on medium and add sausage (break up while cooking). Once browned, remove to a paper towel lined plate to soak up the grease.
Using the grease left in the pan, add the peppers and onions. Cook for about 7 minutes then add in cauliflower rice. (If using frozen, cook separately as not to get the pan watery). Cook until cauliflower is tender, about 5 more minutes.
Turn heat to low, add back in the sausage and add the marinara sauce and seasonings. Mix thoroughly.
